There are trains, trams (12,51) and metros to Amstel station from most other stations in Amsterdam. It is a couple of minutes walk from there.

TO GO TO THE EAST, GO TO AMSTEL STATION, THEN GO TO HITCHHIKERSPLACE BEHIND FORTIS BANK (Prins Bernhardplein), MAKE A SHIELD WITH ALMERE (AND AMERSFOORT). ALL PEOPLE WHO GO TO ALMERE (IT WILL BE A LOT), GO ABOUT 2 KM ON THE A1. THERE IS A BP GASSTATION (muiden), THIS IS A GREAT PLACE TO GO HITCHHIKING DIRECTION AMERSFOORT, ENSCHEDE, GERMANY. I DID THIS 50 TIMES NOW BECAUSE MY PARENTS LIVE IN APELDOORN, BETWEEN AMERSFOORT AND GERMANY

You can either go and hitch from the same spot as for going West at the Amstel Station, or hitch from where the motorway to Utrecht starts, which is called the Utrechtsebrug. This second option definitely gives you more cars going into the right direction and generally a lot less waiting time.
