Go to the Raheen roundabout on the South side of the city. This can be reached by the number 304/304 A bus from Limerick City Centre (Outside the Brown Thomas department Store) for around 1.50 Euro. From the last stop, you walk up the motorway for 5 minutes until you reach a second roundabout. Here, you turn left and stand on the side of the motorway behind some yellow lines. We waited for 5 minutes with a sign at this spot and got a lift to Cork city.
 
I have hitched from this spot twice. The first time I was picked up and brought all the way to Cork. The second time I was moved on by the Guards. They didn't give me much hassle, just said that it is illegal and dangerous to hitch on motorways. It might be worth noting if you plan to hitch from here. Another less direct option if you don't want to hitch on the motorway is to go to the regional hospital (Bus 301 or 304 from bus/train station) and hitch from the bus stop just after it to Patricks Well, the driver dropped me at a spot where the traffic for Cork comes off the motorway onto the Cork road and I got a lift in minutes.
