If you're hitchhiking in Voss on a Sunday afternoon, you'll find lots of tourists driving in both directions. There is one youth hostel ("vandrarheim" in Norwegian) in Voss that is a nomad base for many travellers who do seasonal jobs, so if you get stuck in Voss, just ask at the hostel if they know any CouchSurfers in town; it's not unlikely that the receptionist will offer you a couch!
West towards Bergen
Voss lies on the E16 going from Oslo to Bergen, so basically every spot where you can be seen and cars can pull over is OK for hitching a ride in both directions. For going east to Bergen, the bus stop in front of the Youth Hostel is a good spot for starting.
East towards Oslo
If you were dropped off at this town on your way to Oslo try the Shell gas station on the Strandvegen. It is easy to get there, just follow E16 by Uttrågata. Make left to Sveresplassen which sooner becomes Vangsgata. There is no gas station till Hemsedal so drivers tend to fill up here.
